3 medium zucchini
½ teaspoon salt
Avocado Walnut Pesto
½ large avocado
1 cup fresh basil leaves
¼ cup walnuts
2 cloves garlic, peeled
½ large lemon
¼ cup grated Parmesan cheese
½ cup water, if needed*
Other
1 tablespoon olive oil
5-6 fresh basil leaves to garnish
Salt and pepper to taste
Optional: Italian seasoning*
