Low carbohydrate diets are commonly practiced but seldom taught. As a result, whether by design or neglect, mainstream medicine has either ignored or relegated this powerful tool to casual use.
At the Good Fat Company, we felt inclined to share these two astonishing doctors with you to give you more information regarding the benefits behind a low-carbohydrate diet.
Here, two prominent medical educators, Jeff S. Vole, Ph.D., RD, and Stephen D. Phinney, MD, Ph.D., draw upon their 6 decades of clinical and research experience to bring you the definitive guide to low carbohydrate living.
As co-authors of the New York Times best-selling book ‘The New Atkins for a New You’, Drs. Volek and Phinney have continued their collaboration to provide an unabridged and in-depth perspective on this controversial and often misunderstood topic. Whether you are a healthcare professional seeking the best care for your patients or an inquisitive health-minded person, the research about the benefits of a low carb lifestyle will forever change your views about healthy food and dieting.
Learn Why:
- Carbohydrate restriction is the proverbial ‘silver bullet’ for managing insulin resistance, metabolic syndrome, and type-2 diabetes.
- A well-formulated low carbohydrate diet improves blood glucose and lipids while reducing inflammation, all without drugs.
- Carbohydrate restriction induces the process of keto-adaptation, refining the body’s metabolism to allow the mobilization and clearance of excess body fat.
- Dietary saturated fat is not a demon when you are keto-adapted.
- Dietary sugars and starches are not necessary to feed your brain or fuel exercise.
- Long-term success involves much more than simply cutting out dietary carbs.
- There is an ‘art’ to electrolyte and mineral management that is key to avoiding side effects and ensuring success.
- Trading up from sugars and starches to a cornucopia of nutrient-rich, satisfying, and healthy natural foods is empowering.
There is even a cookbook to complement “The New Atkins for a New You” book.
In The Art and Science of Low Carbohydrate Performance, we specifically address how a low carbohydrate diet can be used by athletes. In ‘The Art and Science of Low Carbohydrate Living’, we made a strong case for low carbohydrate diets as the preferred approach to managing insulin resistance (aka carbohydrate intolerance). However, on the continuum of insulin resistance, athletes as a group cluster on the side of insulin sensitivity. Thus most athletes do not have anywhere near the same level of carbohydrate intolerance as someone who is overweight with metabolic syndrome or diabetes.
The key fact underlying this book is that you can train your body to burn fat by simply changing your diet over a period of a few weeks, thereby turning blood sugar and glycogen into secondary fuels. Once you make this transition, you can then train harder, perform longer, and recover faster. So the simple answer to why we endorse a low carbohydrate lifestyle for athletes is that this strategy has worked for us and many people we know. More importantly, we have both conducted and published human research that supports this approach, adding to a growing body of literature that now points to the merits of reducing dietary carbohydrates to optimize fat metabolism. We have thus accumulated a unique knowledge base that we want to share so you too may experience it for yourself.
Dr. JEFF VOLEK is an Associate Professor in the #1 ranked Department of Kinesiology at the University of Connecticut where he teaches and leads a research team that explores the physiologic impact of various dietary and exercise regimens and nutritional supplements. Dr. Volek’s most significant line of work has been a series of studies performed over the last 15 years aimed at better understanding what constitutes a well-formulated low carbohydrate diet and their impact on obesity, body composition, adaptations to training and overall metabolic health. This line of work has shown profound effects of carbohydrate restriction on overall health and well-being, as well as peak performance. He has also performed some of the seminal scientific work on dietary supplements such as creatine, carnitine, caffeine, whey protein and a variety of other ergogenic aids. He has published 250 scientific manuscripts and presented over 100 talks at scientific and industry conferences in eight countries. He was co-author of the New York Times Best Selling “The New Atkins for a New You” published in March 2010, and has subsequently self-published two books “The Art and Science of Low Carbohydrate Living” and “The Art and Science of Low Carbohydrate Performance” that delve deeper into the science and application of low carbohydrate diets.
Dr. Volek does not just write about his research, he actually uses it. A former athlete and competitive powerlifter, he continues to follow the principles of a diet low in carbohydrate while training regularly for strength and health.
Dr. STEPHEN PHINNEY a physician-scientist who has spent 35 years studying diet, exercise, fatty acids, and inflammation. He has held academic positions at the Universities of Vermont, Minnesota, and California at Davis; and leadership positions at Monsanto, Galileo Laboratories, and Efficas. He received his MD from Stanford University, Ph.D. in Nutritional Biochemistry from MIT, and did post-doctoral research at Harvard.
He has designed, completed, and published data from more than 20 clinical protocols involving foods, diets, exercise, oxidative stress, and inflammation. His recent work in the private sector has resulted in several issued and pending patents. He has authored more than 70 peer-reviewed papers and book chapters on a wide variety of topics, including the effects of diets and specific nutrients on inflammation, the interaction between diet and exercise and their effects on obesity, body composition, physical performance, and cellular membrane structure.
Dr. Phinney’s clinical experience includes 20 years of inpatient and outpatient clinical nutrition, including directing multidisciplinary weight management programs in 3 locations. As an internationally recognized expert in obesity, carbohydrate-restricted diets, diet and performance, and essential fatty acid metabolism, he has given hundreds of presentations to industry, health care professionals, and lay audiences.
In collaboration with Dr. Eric Westman and Dr. Jeff Volek, he co-authored the New York Times Best Selling “The New Atkins for a New You” published in March 2010.
