Ingredients:
- 3 lbs Round steak (you can cube or leave it as is)
- 1 bunch of fresh cilantro- chopped (set aside half for topping)
- 1 white onion- chopped
- 1 16oz container of beef broth
- 2 cups- shredded cheese (cheddar/ mozzarella)
- Low-carb flour tortillas
- 3 tablespoons cumin
- Black pepper/salt as you like
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- Dash of cayenne optional for extra spice
- Baking dish
- Crock pot
Burrito Toppings:
Cilantro, Sour Cream, Salsa, Hot Sauce
How to cook:
Set crock pot to high heat
*Keep tortillas and cheese in the fridge until it’s time to assemble burritos*Add beef and all of the ingredients to the crock pot, give it a stir, and cover
Cook for 3 hours & leave covered
**Tip: when beef is cooked add pour crock pot contents into a blender and blend for 10-20 seconds for a minced stuffing….this creates juicy burritos**
Spray baking pan with nonstick
Fill tortillas with meat mixture and cheese- roll up and line them in the dish
Top your burritos with the remaining juices, meat, and cheese
Cover with tin foil and bake for 20 minutes
